15 minutes recipe ideas: Basil, tomatoes and bocconcini summer salad

It is summer time in Australia, and temperatures are reaching 30 degrees, so all I can think of is to spend as much time as possible swimming in the ocean or enjoying these beautiful summer days in the pool with a glass of cold sparkling mineral water and a slice of lime. What I can’t think of is food.

However, considering the amount of exercise we do on a daily basis, we need to eat enough nutritions to keep us going, and this recipe, given to me by my friend, comes in very handy these hot days, as this salad is very light, refreshing and, at the same time, it makes you feel full and energised for a long time.

Preparation: 10 minutes

Ingredients:

  1. 1 bunch of basil
  2. 3-4 tomatoes
  3. about 10 baby bocconcini balls
  4. Olive oil
  5. Balsamic vinegar
  6. Salt, black pepper

Preparation method:

Cut each tomato into 6 or 8 wedges, mix them with basil leaves, add bocconcini, 1 t.s. of olive oil, 1 t.s. of balsamic vinegar, add some salt and black pepper, mix it well and enjoy.


Sometimes I add other veggies like capsicums (red and yellow capsicums look spectacular in this salad – or any salad), cucumbers or lettuce, but this recipe is delicious as it is.

This has become one of my favourites salads, because almost every single ingredient is bought from our local farmers, which makes it full not just with nutrients and flavour but also with a flow of positive energy.
