This is also one of my favourite recipes that is very easy to cook, especially when you have people coming to your house for dinner, and you haven’t received much notice :)
I love Ricotta cheese, so I always have it at home, and this time I also bought a bunch of baby spinach at the local Farmers market. I usually keep a few sheets of puff pastry in the freezer, just in case I have to bake something quick.
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients:
- 1 bunch of spinach
- 300 g of Ricotta cheese
- Puff pastry sheets
Preparation method
- Preheat the oven to 180 C
- Boil spinach in hot water for 1 minute, then cut it into small pieces
- Mix spinach with Ricotta
- Put this mix on a puff pastry sheet and roll the sheet to cover the mix
- Bake until ready (about 20 minutes)
Once it’s cooked, leave the rolls to cool down for a little bit and then cut them into serving-size pieces and serve with tea or coffee.
Spinach and Ricotta rolls is a savory dish, so if you add cherries or other fruit into the Ricotta cheese instead of spinach, plus add a little bit of sugar, you will get a delicious sweet dessert instead.
